We don’t cure with intense heat like our competitors do, as that will destroy the flavor profile. From wood science we know that sugars boil at 216 degrees and burn at 223 degrees. Most of our competitors use high heat gas fired kilns that run at temperatures in the 235 to 275 degree range. That my friends is not curing wood for flavor as it is burning out the sugars.
Our patented curing process is 100% focused on preserving the flavor. We remove the free water; the water in the veins, and preserve the nutrients, the sugar (ie, the flavor). All steaks are steaks but some are a choice cut and other are prime cuts. Our Smoking Wood is the Prime Cut of steaks.
